Easy Ghee Rice with Mint & Coriander

An easy one-pot ghee rice – pulao rice cooked in ghee with ginger-garlic, fennel, garam masala and ground mint and coriander, done in a pressure cooker.

Ingredients
  

  • 2 cups pulao rice
  • 2 tbsp ghee or vegetable oil
  • 1/2 tsp ginger-garlic paste
  • 1/4 tsp garam masala powder
  • 1 tbsp green chilli finely chopped
  • 1 tbsp mint and coriander leaves ground
  • 1/2 tsp fennel seeds
  • salt to taste

Method
 

  1. Soak the rice in water for a few minutes and drain.
  2. Heat the ghee in a pressure cooker.
  3. Add the ginger-garlic paste, garam masala, fennel seeds, green chilli and ground leaves and stir well.
  4. When fragrant, add the rice and salt and mix well.
  5. Add 2 cups of water and cook until the first whistle.
  6. Serve hot with salads.
