Kappa Puzhukku – Spiced Tapioca for Evening Tea

Tapioca (kappa, കപ്പ) is Kerala comfort food. Boiled and tossed with a simple tempering and fresh coconut, it is perfect with a cup of evening tea.

Tips from the Ruchippura kitchen

  • Don’t overcook the tapioca – it should be soft but hold its shape.
  • Drain it well before tempering.

Kappa Puzhukku (Spiced Tapioca for Evening Tea)

Kerala tapioca (kappa) boiled with turmeric and tossed with mustard seeds, ginger, garlic, green chilli, curry leaves and coconut. A comforting evening snack.

Ingredients
  

  • 2 cups tapioca peeled, small pieces
  • 1 tbsp shallots chopped
  • 1/2 tsp garlic chopped
  • 1/2 tsp ginger chopped
  • 1/2 tsp green chilli chopped
  • 6 curry leaves
  • 1 pinch turmeric powder
  • 1/2 cup grated coconut
  • 1/2 tsp mustard seeds
  • 2 tbsp oil
  • salt to taste

Method
 

  1. Peel the tapioca and cut into small pieces.
  2. Cook in 3 cups of water with turmeric and salt, then drain.
  3. Heat the oil in a kadai and let the mustard seeds crackle.
  4. Add the shallots, ginger, garlic and green chilli and stir for a few minutes.
  5. Add the tapioca, grated coconut and curry leaves and mix well.
