Prawn Cutlet (Kerala Chemmeen Cutlet)

Kerala chemmeen cutlet – crushed prawns and potato spiced with garam masala, chilli and ginger-garlic, coated in egg white and breadcrumbs and fried.

Ingredients
  

  • 1 cup prawns cleaned
  • 2 cups potato cooked and mashed
  • 1 cup onion finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tbsp chilli powder
  • 1/4 tsp garam masala powder
  • 1/4 tsp turmeric powder
  • 1/4 cup egg white
  • 2 cups breadcrumbs
  • oil for frying
  • salt to taste

Method
 

  1. Cook the prawns in a little water with chilli powder, turmeric and salt, then crush.
  2. Heat a little oil in a kadai and sauté the onion for a few minutes.
  3. Add the ginger-garlic paste and garam masala and stir well.
  4. When brown, add the potato and prawns and mix well.
  5. Shape into balls and flatten into cutlets.
  6. Dip in egg white, coat with breadcrumbs and fry until light brown. Serve with tomato sauce.
