Palak Mutta Thoran (Spinach Stir-Fry with Egg)

A quick Kerala-style stir-fry of palak (spinach) with shallots, garlic and red chillies, scrambled with egg. Ready in 15 minutes.

Ingredients
  

  • 1 bunch palak or spinach chopped
  • 1 egg
  • 1 tbsp shallots chopped
  • 1/2 tsp garlic chopped
  • 4 dried red chillies broken
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/4 tsp turmeric powder
  • salt to taste

Method
 

  1. Chop the palak into small pieces.
  2. Heat the oil in a kadai and let the mustard seeds crackle.
  3. Add the shallots, red chillies and garlic and stir for a few minutes.
  4. Add the palak, turmeric and salt and cook for a few minutes.
  5. Add the egg and mix well.
  6. Serve hot with rice or chapathi.
