Muthira Chammanthi – Kerala Horse Gram Chutney

In the good old days, grandmothers used horse gram (muthira, മുതിര) for strength. It is full of fibre, and sprouted horse gram is rich in nutrients. You can make so many dishes with it.
This coarse, tangy chutney is one of the simplest.

Tips from the Ruchippura kitchen
- Roast the horse gram until it smells nutty – this is where the flavour comes from.
- Use only a few drops of water; chammanthi should be thick.

Muthira chammanthi – a nutritious Kerala chutney of roasted horse gram ground with coconut, shallots, red chillies, ginger and tamarind. Perfect with rice or dosa.

Method
- Dry-roast the horse gram for a few minutes.
- Grind it well in a mixie.
- Add all the other ingredients and grind again with a few drops of water.
- Serve with rice or dosa.
