Easy Tomato Rice – One-Pot Pressure Cooker Recipe

Easy Tomato Rice (One-Pot Pressure Cooker Recipe)

Easy one-pot tomato rice – basmati rice cooked in ghee with onion, ginger-garlic, garam masala and tomato purée, garnished with cashews, mint and coriander.

Ingredients
  

  • 2 cups basmati rice
  • 3 tbsp ghee
  • 1 cup tomato purée
  • 1 tbsp onion finely chopped
  • 1/2 tsp garam masala powder
  • 1 tbsp green chilli chopped
  • 1/2 tsp ginger-garlic paste
  • 1 pinch turmeric powder
  • 1 tbsp mint and coriander leaves chopped
  • cashew nuts to garnish
  • salt to taste

Method
 

  1. Soak the rice in water for 10 minutes and drain.
  2. Heat the ghee in a pressure cooker and fry the onion for a while.
  3. Add the ginger-garlic paste and stir for 5 minutes.
  4. Add the garam masala and green chilli.
  5. When light brown, add the rice and stir for a few minutes.
  6. Add salt, turmeric, 1 cup of water and the tomato purée and cook until the first whistle.
  7. Garnish with cashew nuts, mint and coriander.
