Kerala Banana Chips – Homemade Nendran Chips

No Kerala tea tin is complete without banana chips (upperi). Made at home with raw nendran banana, they are crisper, fresher and far tastier than the packet kind.
Tips from the Ruchippura kitchen
- Dry the bananas completely after soaking – water makes the oil splatter.
- Slice straight into the hot oil for the thinnest, crispiest chips.
- Sprinkle the salt while the chips are still hot.

Kerala Banana Chips (Homemade Nendran Chips)
Crisp homemade Kerala banana chips – raw nendran banana soaked in turmeric water, thinly sliced and fried, then salted. Better than any shop-bought packet.

Method
- Peel the bananas and soak them in water with the turmeric for 10 minutes.
- Drain and dry them completely.
- Slice the bananas into thin rounds and fry in hot oil, stirring.
- When they are almost light brown, lift out onto a paper towel.
- Sprinkle with salt, mix well and serve with evening tea.
