Matta Rice Puttu – Soft Kerala Steamed Rice Cake

This is an easy and special recipe for breakfast. Using soaked and freshly ground matta (Kerala red) rice makes the puttu softer and more flavourful than ready-made flour.

Tips from the Ruchippura kitchen
- Grind the rice in small batches to a coarse, sand-like texture.
- The flour should hold together when pressed but still crumble easily.
- Don’t pack the puttu maker too tightly or the puttu turns hard.

Matta Rice Puttu (Soft Kerala Steamed Rice Cake)
Soft Kerala puttu made from soaked matta rice, layered with fresh coconut and steamed. Serve with kadala curry, or with milk and sugar.
Ingredients
Method
- Soak the rice in water for 8 hours.
- Drain well and grind in a mixie, a little at a time, into a coarse flour.
- Mix in the ghee, sugar, salt and half a cup of the coconut. Leave for a while.
- Fill the puttu maker, layering the rice mixture with grated coconut.
- Steam until cooked.
- Serve with curry, or with milk and sugar.
