Chakka Unniyappam – Kerala Jackfruit Unniyappam

When jackfruit is in season, it goes into everything – and these jackfruit unniyappam (ചക്ക ഉണ്ണിയപ്പം) are one of the best ways to use it. The fruit adds sweetness and a wonderful aroma.

Tips from the Ruchippura kitchen
- The batter should be thick, like idli batter.
- Fry on medium heat so the inside cooks before the outside browns.

Chakka Unniyappam (Kerala Jackfruit Unniyappam)
Chakka unniyappam – sweet Kerala fritters made with ripe jackfruit, rice and jaggery, flavoured with sesame, cardamom and fried coconut. A seasonal favourite.
Ingredients
Method
- Remove the seeds from the jackfruit and cook it with a little water.
- Soak the rice in water for 4 hours.
- Grind the rice with the jackfruit and jaggery.
- Add the sesame seeds, cardamom, coconut pieces and a very little salt, and mix to an idli-like batter.
- Leave for 3 hours.
- Heat oil in the unniyappam pan, fill the moulds and fry until golden on both sides.
Notes
Quick version: use 2 cups of powdered raw rice instead of soaking, 2 cups of cooked and ground jackfruit, 1 cup of grated jaggery, 1/4 tsp cumin seeds and a little cardamom. Mix with a little water to a thick batter and fry straight away.
